250 grams Butter
1 Cup Sugar
1/4 Cup Oil
2 Eggs
1 Teaspoon Vanilla essence
1/2 Cup Cocoa
3 Cup Coconut
2 Cup Cake flour
Mix butter and sugar until creamy.
Add oil and beat.
Add eggs and beat.
Add cocoa and mix in well.
Add coconut and flour to form a soft dough.
NB. Do not add all the flour at once as the flour quantity may vary as needed to form a soft dough.
Roll out dough and scrape with a fork and cut with round cutter and place on greased tray.
Bake on 180°C.
When cool coat with chocolate, melted on low in a microwave oven, and join the 2 biscuits together.
