Leg Roast
06 Main Lamb- Leg Roast
1 Leg of Lamb
2 Tablespoon Lemon juice
4 Tablespoon Worcester sauce
4 Tablespoon Olive oil
1 Tablespoon crushed Red Chilli
1 Tablespoon crushed Garlic
1 Teasponn crushed Ginger
1 Tablespoon Texan Spice
1 Teaspoon Lemon Pepper
1 Teaspoon Tenderiser (Level teaspoon)
3 Stalks of Rosemary optional
3 Medium Onions peeled and quartered lengthwise
8 to 10 Baby Carrots peeled
Marinate the leg of lamb with the ingredients. Separate the sprigs Rosemary from main stalk and place in pan and in leg incisions.
Place in roasting pan and cover with foil.
Optionally add carrots and onion wedges into the pan.
Bake in oven on 180°C for 4-5 hours until tender. Then remove foil and bake for further 15 min.
Remove the roast from the pan and place pan on stove top to thicken the sauce if needed.
Optionally add a blob of butter to give shiny finish.
