Muffin Mixture
1 Tablespoon Butter
1 Medium Onion chopped fine
100 Grams Feta cheese chopped into small cubes
1 Tablespoon Fresh chopped Rosemary
Ground Black Pepper
Muffin Mixture
1 Egg
1 Cup Milk
2 1/4 Cups Flour
1 Tablespoon Baking Powder
1 Teaspoon Salt
1 Egg for Egg wash
Cheese Mixture
Melt the butter in a small saucepan, add in the chopped onion and cook for about 5 minutes till its softened.
Remove from heat and leave it to cool.
Once cool, add in the chopped feta cheese and rosemary. Season with freshly ground black pepper.
Muffin Base
Beat the egg then add the milk and whisk in a large mixing bowl.
Sift the flour, baking powder and salt into the mixing bowl.
Using minimum number of folding movements
You should finish folding in 15 seconds and ignore the lumps in the mixture - do not overmix!
Add the Cheese mixture into the muffin mixture, folding in, as before.
Pre-heat the oven to 180°C on 3D heat or 200°C in a normal oven.
Place 12 muffin cases in the muffin tins them spoon the mixture into them.
Beat the second egg and brush the muffin tops with it.
Bake on the centre shelf of the oven for about 20 minutes, or until well risen and golden.
Remove the muffins from the tins and serve immediately.
Optionally substitute Feta for Cream Cheese and Onions for Olives and Peppers, etc.
