2 Cup Cake flour
1 Cup Hot Milk
1 1/2 Tablespoons Butter
1/2 Teaspoon Baking Powder
Pinch Salt
Making the Puri
Heat the milk and butter then add to sifted flour and other ingredients in a bowl.
Knead to form a stiff dough then aside aside for about 2 hours.
Portion into about 4 balls.
Roll out into discs about 3mm and cut with knife or cutter into 3 to 4cm shapes.
Frying
Heat oil in a deep pot. Test if oil is ready by dropping a small pinch of the dough into the oil. The oil will be ready if the dough rises up to the surface immediately.
NB: The oil must not be too hot.
Drop a puri into the oil face down. It will fall to the bottom of the pot and rise up almost immediately.
NB: Fry one puri at a time.
Try to keep under the surface with a frying spoon for a few seconds. It will form a balloon or develop bubbles. Turn it over and fry for until it starts to colour lightly then remove.
Drain on a paper towel and serve asap.
