04 Soup - Haleem
1 Kilogram Lamb or Chicken
500g Soup Mix
1/2 Cup Oats
Water to cook soup mix and oats
4 Onion Chopped
4 Tablespoon Olive oil
2 Tablespoon Ground Ginger
2 Tablespoon Ground Garlic
1 Tablespoon Ground Green Chillies
1 Tablespoon Ground Red Chilli
1 Tablespoon ground Coriander
1 Tablespoon ground Cumin
2 Teaspoon Salt
1 Teaspoon Tumeric
1 Litre Water
1/2 Teaspoon Gharam Masala for garnish
Green Dhania Chopped for garnish
Mint Chopped for garnish
Soak the soup mix in boiling water overnight.
Rinse and boil the soup mix until soft.
Cook the oats.
Allow soup mix and oats to cool then bombine and liquidise.
Braise chopped onion in oil until golden brown.
Add Garlic and Ginger and braise for a minute.
Add meat and tumeric.
Braise the Lamb for 40 min or chicken for 20 min - until cooked.
Once the meat is cooked and water evaporated, add the dry spices and cook for 10 min.
Add the liquidised mixture and 500ml water and cook for 20 min stirring continuously adding remaining water as needed.
Garnish with greens and gharam masala.
