06 Main Seafood - Prawn, Crayfish or Fish Curry
Prawn or Fish Curry Base
1 Onion chopped & braised
1/2 Teaspoon Garlic
1/2 Teaspoon ground Red Chilli
1 Teaspoon fine Chilli powder
1 Teaspoon ground Coriander
1 Teaspoon ground Cumin
1/2 level Teaspoon Turmeric
1 Teaspoon Salt
1 Cup Tomato Passata
7 Curry Leaves
2 whole Green Chillis slit long the length
125ml coconut milk
125ml fresh cream
1 or 2 Teaspoon Honey to taste
Fresh Coriander for garnish
Remember in fish & prawns no Ginger!
Prawn Marinade
500g prawns
1 Teaspoon ground Garlic
1 Teaspoon Red Chilli powder
1/2 Teaspoon Salt
1 Tablespoon Lemon juice
Fish Marinade

Few sprigs of Curry Leaves
Braise the onion until golden brown.
Add all the spices and braise for a few minutes.
Add tomato & cook for about 5 minutes.
Cool, then blend until smooth.
Pour into pot then add curry leaves, green chillies
Add the fish or prawns
Cook for 5 minutes, then add coconut milk and cream.
Taste and add honey if it’s too tangy.
Garnish with chopped coriander.
Prawns
Prepare and Marinate the prawns and fry in butter
Add to the curry base as instructed above.
NB: Do not add curry leaves to the prawn curry.
Fish
Prepare and Marinate the fish and fry in oil.
Add to the curry base as instructed above together with a few sprigs of curry leaves.
