02 Savoury - Pancakes
Pancake Batter
2 Eggs
1 1/4 Cup Milk
1 Tablespoon Oil or Butter (melted)
1 Teaspoon Baking powder
1 Cup Cake flour
Savoury Filling
1 Small onion
2 Tablespoon Olive Oil
2 Cup Chopped chicken or steak
Chicken seasoning and spices
1/4 Cup Green dhania
Salt to taste
White sauce
2 Tablespoon Cake flour
2 Tablespoon Grapeseed or olive oil
1 Cup Milk
Beat eggs until fluffy.
Beat in the liquid and the oil or melted butter then add the flour and baking powder and beat well.
The batter must be liquidy. Add more liquid if necessary then cover and refrigerate for 30 minutes.
Lightly oil non stick pan and pour batter to line pan.
Fry pancakes on medium heat for about 2 min until light brown then turn over and cook for a further 30sec.
Stack on a plate until all done.
Savoury Filling
Braise onion in olive oil then Add chopped chicken or steak cubes and spices and cook until done.
Add green dhania and spring onion.
Braise 2 Tablespoon flour and oil on low heat until creamy then add milk and stir continously until thick and creamy.
Add salt to taste.
Preparation to serve
Lay a pancake on a dinner plate and spoon a little of the filling mixture across the middle.
Add a little white sauce for Savoury pancakes and roll up.
Sprinkle grated cheese and herbs.
Heat for 1 minute on high in the microwave just before serving.
Alternative - Sweet Filling
Combine sugar and cinnamon and sprnkle on plain pancake. Rollup and serve with ice cream or fresh cream.
