07 Achaar - Mango Jam Achaar
20 Green Mangoes
Achaar Sauce
1/4 Cup Vinegar
1/4 Cup Water
1/4 Cup Corn Flour
3 Tablespoon Mustard Powder
1 Tin Fine Apricot Jam
3 Tablespoon Methi Masala
3 Tablespoon Fine Red Chillie Powder
3 Tablespoon Sugar
1 Tablespoon Salt
Oil
1/4 Cup Oil
1 Tablespoon Sesame seeds
1 Tablespoon Whole Cumin
4 Sliced Green Chillis
10 Curry leaves
1 Tablespoon Mustard Seeds
Cube and optionally peel the mangoes and set aside.
Achaar Sauce
Liquidise the vinegar, water, corn flour and mustard powder.
Mix in methi masala, red chilli powder, sugar, salt and jam.
Bring to boil in pot to make a thick smooth paste, stirring continuously.
Remove from the heat and allow to cool.
Once the sauce has cooled, add to mangoes.
Oil
In a small pan heat oil and add the sesame seeds, mustard seeds, cumin, green chillis and curry leaves and braise for about 3 minutes.
Combine the mangoes, sauce and oil in a large dish and mix well.
The achaar can be bottled immediately then stored in refrigerator.
