Jardo Sweet Rice
01 Starter - Jardo (Sweet Rice)
1 Cup Tastic rice
1/2 Teaspoon Arad
3 Cups Water
Syrup
1 1/2 Cup Sugar
1 1/2 Cup Water
1/2 Teaspoon Saffron
1/2 Teaspoon Elachi powder
2 Elachi pods
2 Pineapple slices Cubed
1 Tablespoon Ghee
Sliced Almonds to garnish
Boil the rice with a pinch of arid until well cooked.
It will be cooked when the rice is pressed and there are no hard kernels.
Drain in colander and return to the pot.
Syrup
Boil sugar and elachi pods to form a syrup then add saffron and pineapple to the syrup.
When the syrup is ready and the rice is properly cooked add the syrup to the rice.
Melt ghee with elachi powder and pour over rice and allow to steam on low till all moisture evaporates.
Turn the rice with a fork.
CAUTION
Care should be taken that the rice must be properly cooked before adding the syrup.
After the syrup is added and if the rice in not cooked the hard kernels will remain.
