02 Savoury - Chicken Samoosa Filling
1 Kilogram Chicken mince washed and drained overnight
3 Medium Onions sliced thinly
1 Teaspoon Lemon juice
1 Teaspoon Salt
1 Teaspoon Ground Garlic
2 Teaspoon fresh Green Chilli chopped finely
1 Tablespoon ground Coriander
1 Tablespoon ground Cumin
2 Tablespoon Olive oil
1 bunch fresh Coriander washed and allowed to dry
Spring onion if desired
Braise the mince in olive oil and lemon juice until all the liquid is evaporated, mixing all the time ensuring that there are no lumps.
Use a potato masher to break up lumps.
Add spices and braise until completely dry, mixing occasionally.
Don't place a lid on the pot at any point.
Ensure that the mince is completed dry and allow to cool.
NB: The samoosa will not crisp if the mince is not completely dry.
After cooling add fresh chopped greens.
