6 Cup Cake flour
1/2 Teaspoon Salt
3 Cup Boiling Water
1/2 Cup Oil
Sift the flour and add the salt.
Add water and oil to form a soft dough.
Form small balls about 3cm. Makes 20 portions.
Sprinkle flour on a dry surface and roll out each ball to about 15-20cm using a rolling pin.
Braise individual rotis in a very hot thick-base pan on medium-high heat.
The roti may balloon, or bubbles will appear.
Flip over and cook until light brown spots appear.
Spread olive oil before removing from the pan.
