02 Savoury - Moothia
1/4 Cup Oil
3 Onions finely chopped
2 Teaspoon Fine Jeero
3 Teaspoon Arad
5 Teaspoon Salt
3 Teaspoon Fine Garlic
2 1/2 Teaspoon Green Masala
4 Bunches Chopped Methi Bhaji
1 1/2 Cup Boiling water
1/2 Packet Tamarind
750ml Boiling water
6 Tablespoon Sugar
3 Cups Cake Flour
3 Cups Chana Flour
1/4 Cup Rice Flour
1 Teaspoon Baking Powder
1. Braise onions with Jeero until soft in a large pot.
2. Add other spices and braise for 5 mins.
3. Add water and bring to boil then reduce heat to low.
6. Sift flours and baking powder together and add to pot and mix well for about 5mins on low heat.
7. The texture should be a stiff dough.
8. Remove from heat and spoon mixture into dish and allow to cool.
9. Moisten palms with oil then take a golf ball size of dough and first smoothen into golf ball then flatten to about 4cm tubes using your palms.
10. Place on tray then freeze.
11. Fry in shallow oil until light brown and crisp.
12. Serve with chutney and lemon.
