Dokra Curry
06 Main Veg - Dokra Curry
1/2 Cup Sugar Beans Boiled
1/2 Cup Broad Beans Boiled
1 Onion Chopped
3 Tablespoon Olive oil
2 Tomatoes Liquidised
2 Teaspoon Ground Garlic
1 Teaspoon Ground Red Chilli
1/2 Teaspoon Turmeric
1 Teaspoon Ground Coriander
1 Teaspoon Ground Cumin
1 Cup Green Beans Sliced
3 Carrots Cubed
1/2 Cup Peas
1 Potato Cubed
1/2 Cup Mixed peppers cubed
2 Teaspoon crushed Green Chillies
20 Dokra fingers
1/2 Cup Green Dhania chopped
Optional - 250 grams Dried fish
Boil sugar beans and broad beans separately.
Braise chopped onion in oil until golden brown.
Add tomato, garlic and spices and braise for 10 minutes.
Optional, add the dried fish and braise for 10 minutes.
And add boiled beans and vegetables.
Braise for 10 minutes and add 3 cups boiling water.
Bring to boil and add dokras and cook on medium heat until done. (about 30 min).
Garnish with chopped green dhania.
