Lamb Curry
06 Main Chicken - Lamb Curry
1 Kg Lamb, wash & drain
2 Onion chopped fine
2 Potatoes cut in half or quarter blocks
1 Tomato or 1/2 Cup Tomato Passata
Optional - 2 Cinnamon sticks, 2 Elachi, 2 Black Peppercorns, 2 cloves, 1 Teaspoon whole Jeero
2 Teaspoon ground Ginger paste
1 Teaspoon ground Garlic paste
1 Teaspoon Red Chilli powder
1 Teaspoon ground Red Chilli
1 Teaspoon Cumin powder
1 Teaspoon Coriander powder
1/2 Teaspoon Turmeric
1 Teaspoon Salt
2 Cups boiling Water
1/4 Teaspoon Garam Masala
Prepare and boil potatoes until semi-soft.
If using fresh tomato, liquidise and cook until reduced by a third.
Braise onion until golden brown then add ginger, garlic and turmeric.
Braise for a few minutes, then add the lamb.and cook for about 40 min.
Add the spices and braise for 2 min.
Add tomatoes and cook for 10 min then add potatoes and about 2 cups of boiling water depending on how you want the curry.
Cook until potatoes are soft.
A good guide that the curry is ready is if oil appears on the surface.
Garnish with chopped green coriander and sprinkle Garam masala.
