Health Bran Rusks
11 Biscuits - Health Bran Rusks
1 Kilogram Self Raising flour
1 Tablespoon Baking powder
500 ml Buttermilk
2 Eggs
1 1/2 Cups Brown sugar
500 Grams Butter
3 Cups All Bran Flakes
2 Cups Chopped Almonds
Optionally add other nuts or seeds
Add the Sugar and Eggs in a mixing bowl and beat for about 2mins then add buttermilk.
Melt the butter add to the mixture and beat for 1 min.
Sift the flour and Baking Powder into a large mixing bowl then add the bran and nuts and mix wellvuntil forms a soft dough.
Prepare baking trays with non-stick spray.
Spread the mixture in the baking trays.
Tray size 60cm x 30cm makes 78 rusks.
Cut slices using the rusk cutter that comes with the trays (about 1.2cm wide x 5cm long).
Bake at 170°C for 20 minutes then reduce heat to 140°C and bake for further 15 minutes until the rusks feel firm on top and starting to color - do not let them get too much color.
Remove from the oven and allow to cool.
Cut through the slices and carefully lift and arrange the rusks onto a cooling rack on the baking tray so they bake evenly.
Return to the oven and allow to crisp at 90°C for further 4-6 hours or until crisp.
Remove from the oven and allow to cool before packing.
