Alfredo Chicken Pasta
06 Main Chicken - Alfredo Chicken Pasta
200 Grams Chicken fillet cubed
Chicken Marinade
2 Onions - Medium, chopped
4 Tablespoon Olive Oil or Butter
1/2 Teaspoon Cummin/Jeero
1 Teaspoon Green Masala
1 Teaspoon Garlic
1/4 Teaspoon Turmeric
1/2 Teaspoon Salt
1 Cup Fresh Cream
Veg
2 Tablespoon Butter
400 Grams Mushrooms
1/2 Cup Mixed Capsicum
Fresh Green Chillies chopped
Pasta
1 Teaspoon Salt
1 Tablespoon Olive Oil
500 Grams Pasta (Penne or Macaroni)
Pasta White Sauce
4 Tablespoon Butter
4 Tablespoon Flour
1 Cup Milk
Salt and Black Pepper to taste
Fresh Parsley or other Herbs.
Cook the Chicken
Clean and cut the Chicken into pieces into cubes about 20mm x 10mm x 5mm
Soften the onions in a Pot with the Olive Oil / Butter
Add the Chicken and Spices and cook until the chicken is done then add the Fresh Cream.
Cook the Veg
In a separate Pan, braise the mushrooms until cooked then remove from the heat and add the capsicum and chillies.
Cook the Pasta
In a separate pot, boil the Pasta in water with 1 Teaspoon Salt and cook per instructions on the package. Drain the Pasta when done but keep 1 cup of the water and add to the chicken.
In another pot melt the butter for the Pasta Sauce then add the flour whisking to ensure the flour does not stick to the bottom of the pot
Add the Milk and Salt while continuing to whisk until the sauce starts to thicken,
Combine everything
When the sauce is ready combine with the chicken and add the pasta.
Garnish with Herbs.
Add milk if the Pasta needs to be reheated.
