2 Cup Cake flour
1 Cup Maize meal
1 Tablespoon Sugar
1/4 Teaspoon Salt
30 grams Butter
1/4 Cup Oil
2 Cups Boiling Water
Cook the mealie meal with oil, butter, salt and water on a stove. It should be a thick porridge consistency when cooked.
Add the mixture to sifted flour and form a dough.
Boiling water can be added as needed.
Form small balls about 6 to 8 balls.
Sprinkle flour on a dry surface and roll out each ball to about dinner plate size using a rolling pin.
Braise individual rotis in a very hot thick-base pan on medium-high heat.
Bubbles may form. Flip over and cook until light brown spots appear.
Spread olive oil or melted butter or ghee on both sides before removing from the pan.
