Lamb Dahl
06 Main Lamb - Lamb Dahl
1 Cup Twer Dahl
1 Kg Lamb, wash & drain
2 Onion chopped fine
1 Tomato or 1/2 Cup Tomato Passata
1 1/2 Teaspoon ground Ginger paste
1 1/2 Teaspoon ground Garlic paste
1 Teaspoon Red Chilli powder
1 Teaspoon ground Red Chilli
1 Teaspoon Cumin powder
1 Teaspoon Coriander powder
1/2 Teaspoon Turmeric
1 Teaspoon Salt
1/2 Cup boiling Water
1/4 Teaspoon Garam Masala
Preparation
Boil the Dahl with 4 cups water and 1/4 onion for about 1-2 hours until soft.
After the dahl is cooked, whisk then pass through colander or sieve.
If using fresh tomato, liquidise and cook until reduced by a third.
Curry
Braise onion until golden brown then add ginger, garlic and turmeric.
Braise for a few minutes, then add the lamb.and cook for about 40 minutes.
Add the spices and braise for 2 min.
Add tomatoes and cook for 10 minutes and about 1/2 cup of boiling water depending on how you want the curry.
A good guide that the curry is ready is if oil appears on the surface.
When the curry is ready add the dahl and cook for 10 min.
Garnish with chopped green coriander and sprinkle Garam masala.
