Chicken & Ginger Soup
06 Main Chicken - Chicken & Ginger Soup
1/2 Chicken fillet cubed
1 Onion chopped
Optional - 1 Cinnamon stick, 4 Peppercorns, 4 Clove, 2 Elachi )
1/2 Teaspoon fine Cumin/Jeero
1/2 Teaspoon fine Coriander
1/2 Teaspoon Turmeric
1 heaped Tablespoon crushed Ginger
1/2 Teaspoon crushed Garlic
1/4 Teaspoon chopped Red or Green Chilli (optional)
1 Teaspoon Salt
500ml Boiling Water
2 Tablespoon Oats
2 Carrots cubed and boiled (optional)
1 Potato cubed and boiled (optional)
Packet Vegetable Soup powder (optional)
Green Coriander for garnish
Braise the onion in olive oil with cinnamon, cardamom, cloves & peppercorns.
Add ginger, garlic and braise then add dry spices and braise for a few minutes.
Add the cubed chicken and cook until the chicken is almost dry
Add the boiled carrots and potatoes and add boiling water and let it cook for about an hour.
Add the oats to the chicken.
Cook for about 10 mins stirring continuously so oats doesn’t stick to pot.
Can add packet soup if desired.
Garnish with green Coriander.
