Making the Burger patties
1kg Topside Beef Mince
1 Cup breadcrumbs
1 Medium onion finely chopped or grated
1 Egg
1 Tablespoon Worcester sauce
1 Teaspoon crushed Garlic
1 Teaspoon Salt
1 Teaspoon Paprika
1/2 Teaspoon Texan Chilli or similar spice
1/4 Teaspoon fine Cumin optional
1 or 2 Green Chilli finely chopped
1/2 cup chopped fresh Coriander
Making the Burgers
2 Tablespoons olive oil
10 Burger rolls
6 Lettuce leaves chopped
1 Medium onion chopped
2 Tomatoes sliced into discs, optionally quartered
Tomato, Mayo, honey & Mustard or other preferred Sauces
Mix all the ingredients for the burger patties in a bowl.
Form 10 balls roughly 120 grams each. Do not overwork the mince.
Gently flatten each ball on a sheet of cling wrap into the shape of a disc slightly larger than the rolls. Fold the cling wrap over in small sections while retaining the disc shape.
Set aside in the freezer or fridge for about 30 minutes.
Fry the patties in a pan on medium heat with about 2-3 Tablespoons olive oil for about 5 minutes on each side until cooked.
Assembling the burgers
Slice the buns across the base into halves
Optionally smear butter on each half and lightly toast on a pan
Spread sauce on the base and top
Optionally add braised onion
Optionally add tomato slice
Place the cheese slice
Top with the patty
Place lettuce and any other salad
Top with sauce then place the bun top.
Marinated Topside Beef Mince
Form 120g Mince ball
Flatten into disc
Fold cling wrap in small sections
Forms 10 Burger Patties
