Chicken Curry
06 Main Chicken - Chicken Curry
1 Chicken cut, wash & drain
1 Onion chopped fine
2 Potatoes cut in half or quarter blocks
1 Tomato or 1/2 Cup Tomato Passata
Optional - 2 Cinnamon sticks, 2 Elachi, 2 Black Peppercorns, 2 cloves, 1 Teaspoon whole Cumin
1 Teaspoon ground Ginger paste
1 Teaspoon ground Garlic paste
1 Teaspoon Red Chilli powder or ground Red Chilli
1 Teaspoon Cumin powder
1 Teaspoon Coriander powder
1/2 level Teaspoon Turmeric
1 Teaspoon Salt
1 Cup boiling Water
1 pinch Garam Masala
Prepare and boil potatoes until semi-soft.
If using fresh tomato, liquidise and cook until reduced by a third.
Braise onion until golden brown then add ginger and garlic and spices and braise for a few minutes, then add in chicken.
Cook for about 10 minutes.
Add tomatoes and potatoes.
Cook for a few minutes, then add about a cup of boiling water depending on how you want the curry.
Cook until potatoes are soft.
A good guide that the curry is ready is if oil appears on the surface.
Garnish with chopped green coriander and sprinkle Garam masala.
