06 Main Beef - Ruwwaya with Beef Mince
Mince
500g Topside Beef or Premium Beef mince
1 Onion chopped
1 Teaspoon crushed Ginger
1 Teaspoon crushed Garlic
1 Teaspoon crushed Green Chilli
1 Teaspoon crushed Red Chilli
1 Teaspoon ground Coriander
1 Teaspoon ground Cumin
1 level Teaspoon Salt
1/2 Teaspoon Chilli powder
1/2 Teaspoon Turmeric
1 Tomato liquidised or chopped
Veg
1 Brinjal
1 each Red, Yellow, Green Peppers
Fresh Coriander to garnish
Cook the Mince
Washed and drained the mince overnight.
Braised the onion until golden brown.
Add the spices and braise for a few minutes.
Add the mince and keep mixing to break up lumps.
When lumps are broken and mince is dry
Add the tomato.
Cook until all liquid evaporates.
Prepare the Veg
Cut the brinjal in quarters lengthwise.
Cut peppers into quarters lengthwise and remove seeds.
Lay in an oven tray and sprinkle with paprika, salt and olive oil.
Bake in oven at 180 oven until soft.
Finish the dish
Transfer the brinjal & peppers into a flat pot & fill with the mince.
Add a little water just to give a steam.
Cook until all the water evaporates.
Sprinkle chopped coriander 🌿
